Eau-De-Vie is a French expression that translates to “water of life.” Spirits such as French brandy (eau-de-vie), whisk(e)y, vodka and aquavit from Norway, all take their names from the alchemic notion that spirits were an elixir of life. Like its Darlinghurst original, the enormous back bar takes centerstage at Eau-de-Vie where bartenders shake, stir, flame and throw iconic Eau-de-Vie creations like the Smokey Rob Roy, Espresso Zabaione and Yuzu Mule along with an extensive list of new libations.
